Ingredients in the Blend
Coriander, chilli, turmeric, black pepper, cumin, fennel, fenugreek, mustard, curry leaves and other traditional spices.
You Will Also Need
- 500g fish, chicken or vegetables
- 200ml coconut milk
- Onion, tomato, ginger, garlic
- Oil and salt to taste
Preparation
- Heat oil in a pan and sauté onion, ginger and garlic until golden.
- Add chopped tomatoes and cook until soft.
- Add 2–3 tablespoons of Aunty Eli's Kerala Curry Mix and sauté for a minute.
- Add your choice of fish, chicken or vegetables and cook with a little water.
- Pour in coconut milk and simmer until cooked through and the flavours blend well.
Aunty Eli's Tip
For a Kerala-style finish, use coconut milk and a few curry leaves while cooking.
Serving Suggestion
Enjoy with steamed rice, appam or Kerala porotta.
